Carpaccio Rolls with Arugula and Dates

Ingredients:
  • One package of beef carpaccio, or about 3 ounces in thin slices
  • Arugula
  • About 1 ounce of Parmesan
  • 4 dates
  • Olive oil
  • Salt and pepper
Preparation:
This recipe is extremely simple and quick to prepare. The most delicate part is to separate the sheets of carpaccio without breaking them. Grate the Parmesan and slice the dates. To assemble, roll out several slices of carpaccio; then top with a bit of arugula, grated Parmesan, and 2 or 3 slices of date. Add salt and pepper, a little olive oil, and secure the rolls with a toothpick. Adjust amounts for number of people.
